Mexican Dorito Casserole

Ingredients:

2 cups shredded cooked chicken
1 cup shredded cheese
1 can cream of chicken soup
1/2 cup milk
1/2 cup sour cream
1 can Rotel tomatoes 
1/2 packet taco seasoning
Bag of Dortios

Directions:

Preheat oven to 350 degrees.
In a mixing bowl, combine all ingredients except the doritos.
In a greased baking dish, put a layer of crushed doritos, 
then a layer of the chicken mixture.
Repeat once more, ending with a layer of chicken mixture.
Top with more shredded cheese.
Cover.
Bake for 30-35 minutes or until bubbly hot.

Nacho Taco Pasta



Nacho Taco Pasta 

Ingredients:

1 lb ground beef
1 package taco seasoning
2 cups shelled macaroni noodles
1 cup shredded cheese
Doritos Nacho Cheese chips

Directions:

Brown your ground beef.
Follow directions on the packet of taco seasoning.
Boil 2 cups of water.
Cook pasta for 10 minutes, drain.
Put pasta in with ground beef, stir.
Add cheese, stir.
Then add Doritos. 
(we add our Doritos to our own bowl, so the chips won't get soggy)

Cream Cheese Chicken Enchiladas



Cream Cheese Chicken Enchiladas

Ingredients:

1 tbsp butter
1 can Rotel tomatoes & green chilies, drained
1 (8oz) package cream cheese, cut up & softened
2 cups chopped, cooked chicken breast
8 (8") flour tortillas
2 cups shredded Monterey Jack cheese
1 pint whipping cream

Directions:

Preheat oven to 350 degrees.
Spray 9x13" baking dish.
Melt butter in large skillet over medium heat.
Add Rotel & saute 1 minute.
Stir in cream cheese, chicken & cook stirring constantly until cream cheese melts.
Spoon 2-3 tbsp of chicken mixture down center of each tortilla.
Roll up tortillas & place seam side down in a lightly greased 9x13" baking dish.
Sprinkle Monterey Jack cheese, & drizzle with whipping cream.
Cover with foil & bake @ 350 degrees for 30 minutes. 
Take off foil & cook for another 15 minutes or until golden brown.

Chocolate Gravy




Chocolate Gravy

Ingredients

1 cup sugar
3½ tablespoons cocoa powder
3 tablespoons self rising flour
1½ cups milk
1 tablespoon butter


Directions

Mix sugar, cocoa powder and flour together until there are no lumps.
Add milk and stir to combine.
Melt the butter in a large sauté pan.
Add the flour mixture and cook on medium heat, stirring continually until it thickens.
Serve over hot buttered biscuits or even ice cream.

Slow Cooker Pulled Pork BBQ





Slow Cooker Pulled Pork BBQ

Ingredients:

Pork Roast (3-5 pounds)
1 tablespoon salt
1 teaspoon black pepper
1½ cups cider vinegar
2 tablespoons brown sugar
1 tablespoon hot sauce
1 teaspoon crushed red pepper flakes

Directions:

Put roast in slow cooker and sprinkle salt and pepper over. 
Pour cider vinegar over. 
Cover with lid and cook on low for twelve hours. 
Remove pork roast and shred with forks. 
Drain juices from slow cooker, reserving two cups of liquid. 
Return pork to slow cooker. 
To the reserved liquid add: 
Brown sugar, hot sauce, and crushed red pepper flakes. 
Stir well. 
Pour over shredded pork and place lid back on. 
Put slow cooker on low or warm until ready to serve.
